Day five lunch: Chicken, avocado, blood orange salad

This has got to be my favorite lunch so far. I could eat this every day, no joke.

It is so simple. Start with a bed of spinach; toss with avocado and balsamic vinegar. Add some cut blood oranges and last night’s leftover chicken. Sprinkle with a tiny bit of salt and a ton of black pepper.

I could write a book about it.

    1. I’m just winging it, no recipes. My guidelines for the cleanse are pretty strict but easy to work with. No grains, gluten, soy, peanuts, dairy, red meat, pork. No sugar, caffeine, or alcohol, of course. Limited nuts, corn, bell pepper, and potatoes. As much as I can eat of: chicken, fish, turkey, avocado, veggies, fruits, olive oil, balsamic vinegar, herbs, coconut milk, and quinoa. It’s happy food!
