Last night we had our first dinner guests since we started the cleanse. We talked of stir-fry, but without the ability to use soy sauce or tamari, I didn’t know what to do. Plus I can’t have rice. And what’s stir-fry without rice?
That’s where quinoa came in and saved the day. Quinoa is a happy little seed that sometimes gets categorized as a grain. But it’s really a seed. And I love it. I’m still learning how to cook with it beyond simply boiling it like rice. But it can really make a dinner filling, which I need right now, being only on day seven of this 30-day, paleo-like cleanse (but more restricting!).
That said, quinoa has made its way into a few dinners by now. So has coconut milk, the only “milk” I am allowed right now. I put it in my smoothies each morning and occasionally use the thick, canned stuff you’ll find in the Asian section… the kind you mix with curry paste for an amazingly rich sauce, full of flavor.
With dinner guests in tow, we decided to copy our chicken and broccoli dish made on night three, except with carrots, onion, and Brussels tossed into the mix. It was easy. Pan fry the chicken in olive oil, using a little salt, pepper, and poultry seasoning. In a separate pan, steam or saute your veggies. And in a third pan, warm the coconut milk over medium-low heat, whisking in a full tablespoon of curry paste until dissolved Add it all together in the end and toss over quinoa for a very satisfying meal. After heaping plates and second servings, our guests left, hours later, still full and happy.
It’s going on weekly rotation for sure. Wait, maybe twice a week!
