Banana quinoa for breakfast (sugar-free, gluten-free “oatmeal”)

Banana Quinoameal Well I finally did it. I tried quinoa for breakfast. Really, I needed a break from the smoothie run. And I craved something with a bit more sustenance, something warm, something I could chew.

I have to say, it’s pretty darn good, this stuff. Gluten free and sweet as can be, it cured my cravings and sustained me all morning.

015 I started with quinoa, cooked as normal (boil 2 cups water per one cup quinoa, until absorbed). Then I blended a whole banana, one cup coconut milk, and 2 tbsp flax seeds before adding it to the cooked quinoa.

After cooking it over medium heat for another 3-5 minutes, I scooped it into a bowl and ate it! As is. Well, that’s not true. First, I tried a smidge with cinnamon and decided it didn’t need it.

So easy, so good.

  1. yummy, i will definitely be trying quinoa instead of my usual oats for breakfast. this looks thick and delicious!

    1. Thanks! No I haven’t tried it yet but I just heard about it. How would one use it? Like oats? You’ll have to share when you try it out!

      1. I just used it to make oatmeal breakfast cookies I made, but I think you can use it like oatmeal. I will have to let you know when I use it more! – In any event I may try your quinoa recipe this weekend!

        1. You’ll have to let me know what you think. It’s very banana-y. I’m curious how others will perceive it. But I do like it!
